Step-by-Step Instructions:


  • Preheat Oven and Prepare Noodles

  • Preheat the oven to 375°F (190°C).

  • Cook the lasagna noodles according to the package instructions, then drain and set aside.


  • Sauté Vegetables

  • Heat olive oil in a large skillet over medium heat.

  • Add onion and garlic, sautéing until softened.

  • Add zucchini, bell pepper, mushrooms, and spinach. Cook until the vegetables are tender.

  • Season with salt and pepper.


  • Mix Cheese Filling

  • In a bowl, combine ricotta cheese, egg, half of the mozzarella, and half of the Parmesan. Mix well.


  • Assemble the Lasagna

  • Spread a layer of marinara sauce on the bottom of a 9x13 inch baking dish.

  • Place three noodles over the sauce.

  • Cover the dish with aluminum foil and bake for 30 minutes.

  • Remove the foil and bake for another 20 minutes or until the cheese is golden and bubbly.

  • Let it cool for 10 minutes before serving.
